Banana Bread in a heatwave

The weather has been really funny lately, 35 C today, thunderstorms and 20ish yesterday, so everyone is a little hot and grouchy. Not to mention that BabyBug has been keeping everyone up cutting his canines or eye teeth, so eating is the last thing we want to do.

However this post http://greenupgrader.com/4869/easy-holiday-recipe-moist-banana-bread/ and the two squishy brown bananas in the fruit bowl have inspired me to make this easy and tasty snack.

Since I am bad at following recipes, usually because I only have half the stuff and couldn’t be bothered shopping, here is what I used:

  • 2 bananas mashed with a fork
  • 1 cup self-raising flour
  • 1/2 cup oat bran
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1/2 cup chopped walnuts
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

In the Oven at 180 C for 30 mins

 

It was very tasty and enjoyed by all, even BabyBug.
